Matty Mitchell mixes fun with rum at Jimmy's American Restaurant, Aspen's undisputed number one cocktail bar. The bartender at Jimmy's – in the heart of Aspen – is a genius. Ask him for a Gosling’s creation and a smile the size of a swizzle stick comes across his face.
A number of the unique cocktails featured at Jimmy’s, such as the "Mattygascar Triangle", are Matty’s own creations, but the restaurant also serves Gosling's established Dark ‘n Stormy® and Bermudian cocktails.
Cocktail Culture is alive and rockin’ at Jimmy’s. Of all the Aspen bars, Jimmy’s bar is the “meeting place” in town. Jimmy’s is recognized as having the finest selection of tequilas, mezcals and agave based spirits as well as a wide range of single malt scotches, small batch bourbons and aged rums including Gosling's Black Seal Rum, Gosling's Gold Bermuda Rum and Gosling's Family Reserve Old Rum. "Mattygascar Triangle," he says without hesitation. "It's made with Gosling's Gold Rum and passion. I use Navan vanilla liqueur and half-n-half. "
2 oz Gosling's Gold Rum
2 oz Navan Vanilla Liqueur
3 oz Half-n-half
Shake vigorously with ice and strain into a martini glass.
