Classic Bananas Foster (for two)

2 tbs unsalted butter
2 tbs dark brown sugar
generous pinch cinnamon
generous pinch nutmeg
2 large ripe but not soft bananas, cut lengthwise
╝ cup Bermuda Banana liqueur
╝ cup Bermuda Black Seal« Rum 151 proof
2 scoops best vanilla ice cream


Melt the butter in a ten-inch omelet or sautÚ pan. Add the sugar, cinnamon, nutmeg and mix well and cook until it gets a little syrupy. Add the bananas and sautÚ a few minutes. Add the Black Seal Rum and Bermuda Banana liqueur, tilt the pan and ignite. When the flames die down transfer to serving plates. Add a scoop of ice cream to each and pour the warm syrup over all.
