How Rum Is Made
The basics of rum making have not changed in centuries. Rum is fermented from naturally sweet molasses, a by-product of processing sugar cane. Yeasts ferment the water thinned molasses, which is converted directly into ethyl alcohol without creating the aldehydes and ketones that are found in grain fermentation. When rum is distilled, it produces 97.5% alcohol and 2.5% water.
