In a rocks glass take sugar and dissolve with a drop of water. Add the bitters and large fresh cut orange rind, muddle. Add ice and rum, stir until glass is chilled.
1 oz Gosling Black Seal Rum
Pour all ingredients into a cocktail shaker, shake with ice, strain over fresh ice. Garnish: Coffee Beans
2 oz Goslings Black Seal Rum
Into a shaker add the Goslings Black Seal Rum, apple cider, orange juice, orange liqueur and ice. Shake vigorously and strain into a martini glass, garnished with a cinnamon sugar rim.
Beat the yolks with 1/2 cup sugar until thickened. Beat the whites with 1/4 cup of sugar until standing in soft peaks. Beat the cream until thickened, but not whipped hard. Fold together the yolks and the whites, and then fold in the cream. Add the whiskey, Goslings Black Seal Rum and Amaretto. Grate on lots of nutmeg. Chill thoroughly. Stir once before serving with more freshly grated nutmeg on top.

1⁄2 oz Lemon Juice
Slice of Fresh Ginger
Pour all ingredients (other than hot water) into a heat-proof glass. Stir to combine, then top with hot water. Garnish with lemon wheel and cinnamon stick.

Scald a heat proof glass with boiling water. Add Irish Cream to the bottom of the glass, then add Black Seal Rum. Fill with coffee and top with whipped cream. Garnish with a sprinkle of
brown sugar.
Cream together the butter, sugar, cinnamon, nutmeg, cloves, and salt. Refrigerate until almost firm. Spoon about 2 tbs of butter mixture into 12 mugs. Pour about 2 oz Black Seal Rum into each mug (filling about halfway). Top with boiling water (to fill the remaining half), stir well, and serve.
Into a heat proof mug of hot chocolate, add the rum and triple sec. Top with whipped cream and an orange peel garnish.
